Holiday Leftover Recipes

Sunday I made Turkey Tetrazzini.

Leftover turkey, chopped up.
2 (8 ounce) packages angel hair pasta
1/4 cup butter
2/3 cup sliced onion
2 cups milk
1 teaspoon salt
1/4 teaspoon ground white pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon ground mustard
1 cup shredded sharp Cheddar cheese, divided
chopped pimento peppers (optional)
sliced mushrooms


I didn't really measure.  I've also used Cheeze Whiz/velveta before. 
While you're boiling your noodles you cook the other things except for cheese together.  Toss the noodles and mix and top with cheese and more pimentos if you'd like.  Bake on 350 or so till it's all hot.  I got great reviews!

I made turkey chef salads,
grilled cheese and turkey sandwiches,
turkey cheese and spinach omelets and
I am going to make a turkey pot pie.

I dont have a recipe, however. I just figure out how to make something based on what I have.

pot pie.  Fabulous idea!

For the first timers out there, you can use a can of cream of ___ whatever you'd like, some small cut up veggies all mixed together and baked in a pie crust. ☺

I also made a ham.  I'm not crazy about ham. 

I have scalloped potatoes, soups, and..... um... lol

I've heard people asking how to make turkey leftovers into dishes that don't taste like turkey.  I ask what's wrong with tasting like turkey?  Bring it on, I'll put all the turkey you got between some sourdough with a bit of mayo and eat well.   :fork:

I also like it in tortilla/lettuce wraps or as enchiladas: where you mix the turkey with ranch or your favorite dressing, roll it in a tortilla, put it in a pan with cheese and bake.

No enchilada sauce?  Sounds good anyway!

I've made many a time, turkey wild rice soup in the crock pot.  I add broccoli & corn.

You can make turkey stir fry with Asian noodles.
