I will get to that today.

This past Thursday was another one of our cooking nights. We made grilled chicken with an avocado & tomato salsa on top. We put that on rice. It was so yummy. The chicken had been marinated over night in a yogurt/lime/cilantro/red onion marinade, and it came out tangy and delicious! will post pics and recipe soon as possible.

I just use the basic part of it,
and add the spices as I see fit.

5-7 extra large eggs
1/3 cup milk
1/2 cup sausage

3 pinch cilpolte pepper powder
1 table spoon greek seasoning
5-9 pinch creole seasoning
1/2 green, 1/2 golden, 1/2 red bell pepper
1/2 cup vidalia onion
1/4 habenero pepper
1 can of mushroom soup

precook your sausage, and chop into small pieces

just chop very fine, all your onions and peppers
mix in with your mushroom soup and spices
and place in pan on the side.

scramble the eggs, and add your milk to them.
near the end add your sausage,  While doing this
start to warm up the soup and allow it to get thick
mix your eggs with the soup and allow it to become
very thick.....
serve over grilled porkchops and potatoes.

The chicken marinade....

Non-fat plain yogurt was blended with fresh cilantro, sweet red onion and lime juice (and just a dash of S&P). Chicken was added and marinated overnight. Then, we grilled it!

The salsa...

Plum tomatoes and avocado were chopped up and mixed with chopped sweet red onion, fresh cilantro, lime juice, and finely chopped jalapeƱo pepper.















Salsa was put on top of the grilled chicken, and some white rice. Yum!














The only thing I would change is next time to serve with some beans because it needed something sweet to balance out the tangy-ness. I would also love to try just the chicken and salsa in a wrap or pita. Mmmmm....

This recipe was fairly simple, and very health-conscious without cutting out flavor.
