Make-ahead/freezer dinners

I've been browsing online trying to find recipes for dinners that I can make days (or even weeks) in advance.

So far I'm not coming up with much, since I'm picky. ;) I'm hoping maybe some of you have a few recipes you'd be willing to share.

Here's what I'm looking for:
- healthy
- budget-minded
- family-style (not gourmet, tedious stuff)

Any takers? err... givers? ;)

Again..remind me. Since it's just me and I've been raised to cook big meals for families, I cook big meals and freeze in small portions so that I can just pull out what I need. However, you can also freeze the whole dish.

One thing that I've found helpful is to fix just the main part of the meal, freeze it and then when the time comes to eat it, just cook/steam/prepare some veggies/salad/rice or what have you to go with it. Still a time saver, but you also have something fresh

Exactly. That's what I like to do, too. But some things freeze well and others don't do so great. I don't like it when something tastes re-heated. Ack.

I'll come and bug you if you forget to post your recipes tomorrow. ;)
