Hey all!
I'm bent on enhancing my culinary repertoire over the next few months and wondered if anyone had any special or favorite recipes to share?
I would like to cook most kinds of food but I'm especially interested in ethnic food and anything super yummy :fork:
If I use any of these recipes I'll be sure to let you know how it worked out and who liked it.
So far, I know I want to try my hand at making some breads and soups over the winter and I love indian food.
here's a recipie for something that my grandma made all the time when i was growing up. however, she liked the ones she could buy up north (U.P. Mich) and would make my grandpa drive an extra two hours to get them !! they are called pasties (rhymes with like last-ies). it's a meat and potatoe pocket sort of thing that the miners up north would take for lunch. they are PHENOM!! i guess they are actually Cornish in origin, but were very common in the mining areas of the midwest. you'll see by some of the directions that this is written in my grandma's voice. this is her recipie spoken to me years ago.
Cornish Pasties
3 c flour
1/2 tsp salt
1 c lard or solid vegetable shortening (Crisco)
1/2 to 3/4 c of COLD water
1 lb beef or pork cut in small pieces - cooked
potatoes, diced (not sure how many to use - grandma said to "cut what you need to fit the meat" and i knew what she meant . . .)
onion (same as above)
rutabaga (not sure if you can get these where you are - they are a spicey sort of root vegetable. don't need much of this to "fit the meat")
salt and pepper to taste
mix flour, salt and lard with pastry blender or finger tips. add enough water to make dough easy to handle. divide dough into 4 parts. roll out each part into a circle about 9 inches across.
mix together beef, potatoes, onion and rutabaga. divide into four parts and put in center of crust. sprinkle with salt and pepper. fold crust over until edges meet. roll up edges to make a good seal.
bake at 375 for 1 hour. after baking, poke with fork to let steam escape.

Although, I was hoping we would try the salmon with a mustard glaze...but Sj thought that sounded gross...it might be, but I like to try weird things.
I will have to post the recipe I have for a tomato garlic stir fry...that is SO good!
Well, maybe we can try it sometime :-\ The stir-fry sounds super though.
Zizi's mom ended up making the Feijoada (which we unfortunately have no pictures of)
...but, zizi and I made Pau de Queijo...which is bread of cheese...and it's really yummy. It's made with tapioca flour, Parmesan cheese, and stuff...mmm, we didn't get a picture of the ones we made, but here is what they usually look like....

that was a yummy meal. we squeezed lime on everything...mmmm.....
but wait Sj, before this we made an Indian meal. Oh yeah! As follows:

which one are you interested in? I will have to dig the Pau de Queijo recipe out of my recipe book...get back to you on that one, and the "Feijoada" my mom made, but you can find a recipe for it almost anywhere... it's a traditional Brazilian rice and beans dish. Feijoada:
INGREDIENTS
* 1lb Black Bean (Dried - Not From A Tin)
* 1lb Salted Pork (Ribs) (we skip this)
* 1lb Salted Bacon (we skip this)
* 8 tablespoons Olive Oil
* 2 Onions (Peeled And Finely Chopped)
* 6 Cloves Garlic (Finely Chopped)
* 2 Large Smoked Sausages (Cut Into Big Chunks)
* 1lb Smoked Pork (Ribs, Cut Into Chunks) (we skip this)
* 1lb Smoked Bacon (Cut Into Chunks)(and we skip this!) :)
* 1 tablespoon Freshly Ground Black Pepper
* 5 Bay Leaves
Method
1. Soak the beans in cold water overnight, making sure they are completely covered. Also soak the salted ribs and bacon in cold water overnight.
2. Drain the beans and put them into a large saucepan of cold water. Bring to the boil over a medium heat, then simmer for 30 minutes until tender.
3. Rinse the soaked salted ribs and bacon well, add to the beans and cook for 30 minutes over a medium heat. Heat a very large saucepan and pour in the olive oil so it covers the bottom. Add the onions and garlic and cook until softened. Add the sausages, smoked ribs and bacon, pepper and bay leaves. Pour in the cooked beans and meat and top up with water. Simmer for about 1 hour, until the meat falls off the bone.
4. Serve the Feijoada with boiled white rice, slices of orange, and very finely sliced spring greens fried in olive oil with finely chopped onion and garlic.
P.S. Squeeze lime all over it! We served it with a salad that had a citrus dressing!

Chicken Korma Curry
2 tbs cooking oil
4 boneless chicken breast- cut into alittle larger than bit-size pieces
1 large onion peeled and chopped
2 tbs good quality prepared curry powder
1/3 pint chicken stock
1 tbs tomato puree
2 tbs caster sugar (I use slightly less)
1 oz ground almonds (optional.....but highly recommended)
Heat the oil in a large frying pan and brown the chicken and onion. Add the curry powder and cook for a few seconds, stirring.
Blend in stock, tomato puree, sugar and cream, Bring to a boil, cover and simmer gently for 30 minutes, stirring occasionally. Just before serving stir in the ground almonds.
It came out wonderfully!!!!!!
K Zizi, now you have to tell about the Italian chicken.

Tsalagi's Wicked GUMBO
1 large chopped onion
1-1/2 cups chopped green bell pepper
1/2 "clump" chopped celery (make sure you chop some of the "greens" too)
3 cups chopped okra (NOT optional; "gumbo" is "okra"! Really!!)
1 bunch of green onions, chop fine and set aside.
1 jar of stewed diced tomatoes *optional*
3 whole bay leaves; crumble 1
salt to taste
1/2 tsp. pepper
1/2 tsp. cayenne pepper
1/2 tsp. thyme
1/4 tsp. oregano
1/4 tsp. sage
1/4 tsp. rosemary
gumbo file
(Tony Chachere's too, if you want it hotter.)
1 large can chicken broth
1 bottle shrimp stock or clam juice
4-5 cups water
1 Tbsp minced garlic
3/4 lb. crabmeat
1/2 lb. andouille or Polish sausage, cut up
2 lbs. shrimp, deveined and shelled
Saute onion, celery and bell pepper in 2 Tbsp. oil in a large pot. Add broth, tomatoes, water, seasonings, garlic, okra, stirring well. Cook 2.5 hrs. Add sausage and cook 15 minutes. Add seafood and cook some more. Turn off heat. Pour in as much file as you like. Add green onions. Mix it up. Serve over fluffy white rice. Aiii-eeee!
Note about spices: if you're using dried / powdered herbs, you might consider putting them in during the last 30 mins. of cooktime

Chicken Con Diti (I think it means Chicken with Olives)
and Spinach Bread (In our new convection oven....oh yeah) we did one white and one whole wheat...the white was better

The chicken is lightly pan fried, and then baked with marinated artichoke hearts, kalamata olives, and mushrooms that have been sautéed with butter and onions. something about this combination causes the dish to form it's own gravy. Mmmm....
the spinach bread is an old family recipe, really simple, filled with spinach, onions, sliced pepperoni, black olives, and a muenster and mozzarella cheese. rolled up in a simple pizza dough, brushed with egg, sprinkled with sesame seeds, and then baked. a lot of people add raisins to this, but we didn't.

the spinach bread is SO good...you could probably get into the Pau de Queijo as well...another cheese bread, but a little harder to make.

This past Thursday was another one of our cooking nights. We made grilled chicken with an avocado & tomato salsa on top. We put that on rice. It was so yummy. The chicken had been marinated over night in a yogurt/lime/cilantro/red onion marinade, and it came out tangy and delicious! will post pics and recipe soon as possible.

1/3 cup milk
1/2 cup sausage
3 pinch cilpolte pepper powder
1 table spoon greek seasoning
5-9 pinch creole seasoning
1/2 green, 1/2 golden, 1/2 red bell pepper
1/2 cup vidalia onion
1/4 habenero pepper
1 can of mushroom soup
precook your sausage, and chop into small pieces
just chop very fine, all your onions and peppers
mix in with your mushroom soup and spices
and place in pan on the side.
scramble the eggs, and add your milk to them.
near the end add your sausage, While doing this
start to warm up the soup and allow it to get thick
mix your eggs with the soup and allow it to become
very thick.....
serve over grilled porkchops and potatoes.

Non-fat plain yogurt was blended with fresh cilantro, sweet red onion and lime juice (and just a dash of S&P). Chicken was added and marinated overnight. Then, we grilled it!

The only thing I would change is next time to serve with some beans because it needed something sweet to balance out the tangy-ness. I would also love to try just the chicken and salsa in a wrap or pita. Mmmmm....
This recipe was fairly simple, and very health-conscious without cutting out flavor.

college surprize, you learn to mix alot of things when you are at college, not always successful, this wasn't one of my most successful creations, but it worked, just adjust the spices to taste...
I'm thinking we sould try a Lamb Saag dish next time.......maybe with some rice and Chapatis.......maybe a Dal side dish?

I canabilized some batteries from an old remote I found in the desk that somehow escaped destruction for my camera. The camera takes really bad pics though so I don't know how it will come out.

Rechargeable batteries...they are a Godsend, and WELL worth the expense, they pay for themselves in no time. :)

I was rumaging and trying to figure out what in the world to make tonight.
so here's what I'm making: a beef tip pizza rolled up.
INSIDE
stewing beef
chopped gr. pepper
chopped onion
crushed tomatoes
smashed garlic clove
basil, oregano, parsley, cayenne pepper, crushed fennel seed,
olive oil
shredded mozzerella
BREAD
1 (.25 ounce) package active dry yeast
1 cup warm water
2 cups whole wheat flour
1/4 cup wheat germ
1 teaspoon salt
1 tablespoon honey
more water
butter
Brown beef with spices, gr.pepper, onion, and olive oil on med-high heat and then turn down low-med to cook thoroughly.
While meat is cooking:
Preheat oven to 350*
In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
Add garlic to meat, cook for about 2 minutes and then add tomatoes.
In a large bowl combine flour, wheat germ and salt. Make a well in the middle and add honey and yeast mixture.
Stir well to combine. Cover and set in a warm place to rise for a few minutes.
Roll dough out on floured surface into 16 x 10 inch rectangle. Transfer to a lightly greased cookie sheet.
Spoon meat mixture onto dough in a stripe, down the middle and about an inch and a half from the sides.
Pour desired amount of mozerella on mixture.
Make diagonal cuts 1 1/2 inches apart down each side, cutting within a 1/2 inch of the filling. Criss cross strips over filling, sealing with water. Brush top with melted butter.
Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

1 pound fresh Brussels sprouts, quartered
2 medium onions, finely chopped
4 tablespoons butter or margarine, divided
1 cup sour cream
1 cup small curd cottage cheese
1 garlic clove, minced
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon caraway seeds
3 cups medium egg noodles, cooked and drained
1 cup soft bread crumbs
Place the Brussels sprouts and a small amount of water in a saucepan; cover and cook until tender. meanwhile, in a skillet, saute onions in 2 tablespoons butter until golden brown. Remove from the heat; stir in the sour cream, cottage cheese, garlic, paprika, salt and caraway. Drain sprouts; add to onion mixture with noodles. Spread into a greased shallow 2-qt. baking dish. Melt remaining butter and toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, at 375 degrees F for 20-25 minutes or until golden brown.

Mushroom and asparagus Risotto with fresh basil (an Italian sticky rice)
Oven-roasted Rosemary and Italian herb potatoes (baby red potatoes halved and roasted face down in a pan of rosemary/garlic/basil olive oil and seasonings)
and mixed greens....

And it was realllllllllll good! Even though I burned the roof of mu mouth with the risotto. :fork:

BUT, i've tried to get a good recipe online and all have flopped so far! i would trade my left arm for that recipe! K, I made more Moroccan flatbread the other day (Matlouh). It was so good, and we found a recipe for black bean dip that Sarah tried out...it was really simple, but very nice with the bread....
Here's the recipe. (they recommended pita bread, but it's better with Matlouh)
Black Bean Dip with Pita Wedges
This recipe makes: 12 servings
Ingredients
1 tablespoon olive oil
1/2 cup chopped onion
1 teaspoon finely chopped garlic
1/2 teaspoon cumin
12 ounce can of black beans
1 tablespoon lime juice
salt to taste
freshly ground black pepper
6 pieces pita bread, cut into triangles
Cooking Instructions
1. Heat the olive oil in a small skillet over medium heat. Add the onion and garlic and cook until the onion begins to soften, about 4 minutes. Add the cumin and cook until the onions are completely soft, about 3 minutes more.
2. Rinse and drain the black beans.
3. Puree the beans in a blender or food processor with onion mixture, lime juice, salt and pepper.
4. Serve with pita triangles.
Serving Size: about 2 tablespoons dip plus 2 pita triangles

These are lobster and shrimp raviolis we made the other day.
They were VERY good! Restaurant quality at least!
I also made a sauce to go over them which required me to cook the lobster and shrimp shells with white wine and vegetables. Half way through reducing the liquid I strained the shells and vegetables out and added butter, salt and pepper, and tomatoes.
We had it with italian style rice salad and steamed asparugus with balsamic dressing.

ewwww, a horse!! I coudn't ride a 4 legged hairy beast hehe I make most convertible mustangs cower in my presence lol. funny thing is that they can't hide it from anyone, they in the wide open for everyone to see that they just got humiliated by my stang! :cool: And they have to suffer listening to my stereo as well :laughhard:

How did it come out?
I had some corn chips with the freshly made cumin/onion/bean dip, fresh spinach, and cherry tomatoes....kind of eclectic, but it hit the spot.

It came out good, even thought I thought I did it wrong at first.

Ok class...
Tonight I made dinner. :D
Spinach salad- Fresh baby spinach, cherry tomatoes, mandarin oranges, boiled egg crumbles, chopped pecans, a three cheese blend (parm, romano, assiago) and I served it with a light raspberry walnut vinaigrette dressing.
Roasted duck with cranberry orange glaze- I cooked the whole duckling in the crock pot all day, and then took it out and cut it up, and placed it back in the pot with a sauce I made from a can of whole berry cranberry sauce, a can of Mandarin oranges, some sugar, a few chicken bouillon cubes, garlic powder and an onion.
Cous cous- I used the box kind, but I used the broth off the duck instead of the water, and I added some garlic seasoning mix and some green onions.
Asparagus- I cheated...I bought the kind at Wal-mart that steams in its own box, in the microwave no less. :)
Rolls- Brown and serve, another WM Freezer special. BUT...I didnt get the name brand kind, I got the kind that are like homemade.
Pumpkin cake- Recipe is on Kraft.com LOL but it was awesome!

Today I made a Mediterranean tuna salad. Canned tuna mixed with chickpeas, finely minced garlic, onion, and celery, and sliced olives. Then I added lemon, olive oil, salt and pepper. Yummy. I had it on a bed of mixed greens with a quick vinaigrette.
I was cooking all day kinda. I took a four hour break and got a nap, but the duck was still in the crockpot during that time, so it was still cooking.
I just ate some leftovers, and I have enough for one more serving of everything. Except the cake....thats all spoken for.
